Nestled in the heart of Paris’s 11th arrondissement, Polka Bakery was founded in March 2022 by Yaël and Julien Schpigel, a duo blending scientific background and artisanal baking expertise. The space, redesigned by Nato Studio, features a charming retro storefront that beckons passersby to step inside.
Everything here is organic and handcrafted: signature sourdough “polka” breads (plain, fig‑walnut, cranberry, or zaatar), rye tourte, corn, turmeric‑pumpkin seed loaves, and soft shokupan milk bread. Their zaatar polka bread is particularly notable (around €10.89/kg).
Their pastries are equally exceptional: apple turnovers filled with Chantecler apple compote, enhanced with vanilla and raw sugar for crispiness; chocolate-orange blossom babka; crunchy strudel; and a vanilla crème flan that consistently receives praise and competition awards (12th best flan in Île-de-France).
The clientele ranges from locals and families to bread enthusiasts from afar. The atmosphere is friendly, staff welcoming, in an intimate setting ideal for a quick gourmet stop or takeaway purchase.
