Located at 85 bis rue de Charenton in a heritage‑listed Art Nouveau corner building, Boulangerie Bo combines the charm of its early 20th‑century décor with bold modern pastry creations. Since 2014, co‑owners Benoît Gindre and pastry chef Olivier Haustraete have fused tradition and innovation in this historic bakery.

Every morning from 7 AM, the team works Label Rouge, organic, and mill‑stone flours to craft traditional baguettes, farmer’s bread (rye, kamut, seeded loaves), and inventive offerings like the “Pain des Voisins” (a blend of rye, buckwheat and wheat) or their signature ink-and-cumin baguette. Their smoked bread, subtly flavored with olive-pit smoke, is a standout creation praised for its robust crust and smoky aroma.

Olivier’s Japanese-inflected pâtisseries are equally bold: try the Mont Azuki (a Japanese twist on Mont Blanc, with red bean vermicelli, cherry blossom cream, meringue and strawberry coulis), Cho Sichuan, soufflé cheesecake, Baba with dates, as well as revisited classics such as Paris-Brest, millefeuille, éclairs and fruit tarts. Butter-rich viennoiseries like cinnamon rolls, praline brioche and raisin croissants round out the menu.

The café’s atmosphere is local and charming, perfect for after a stroll along the Promenade Plantée or a visit to the Marché d’Aligre. With a mix of neighbors, bread afficionados and curious gourmets, Bo welcomes guests for takeaway or seated moments on its modest terrace or indoor tables. They also take orders for special pastries.

An interesting anecdote: the bakery once was Bazin, beloved by locals, and while the new owners couldn’t alter its façade, they revitalized everything inside. At first met with resistance, their commitment to quality and creativity quickly won over the community. Today, Bo is celebrated in Guidebooks and praised by Gault & Millau and Time Out for its unique blend of heritage and modernity.
